King of Diwali sweets: Kaju Katli

One of the most popular Indian sweets, Kaju Katli is loved by children and adults alike. It is also often gifted during the Diwali Festival. Here's an easy recipe to make it at home.

Ingredients

  • 1 cup cashews
  • ½ cup sugar
  • 5-6 tbsp water
  • 9-10 strands of saffron
  • 2 tsp ghee or butter
  • 2-3 medium sheets of silver wark (optional)

Method

  • Grind the cashews. Grind cashews 2-3 times by mixing it every time to avoid uneven grinding of the cashews. It’s essential for the cashew powder to be fine and lump free in order to get the katli consistency correct.
  • Now in a pan, add unsalted butter, water and sugar. Keep the flame on medium heat.
  • Once the sugar has dissolved, turn the heat to low and add powdered cashew.
  • Mix and let it cook.
  • Once you notice that the mixture is lumping and leaving the pan then its ready.
  • Now transfer this dough on a large plastic sheet.
  • Knead this dough for 5-7 mins (be careful as the dough will he hot. If need be, use the plastic sheet to cover the dough for kneading).
  • Once the dough is warm and smooth in consistency, cover the plastic sheet on top of the dough and roll it with a rolling pin into the desired thickness.
  • Now lay the silver work sheets on top of the kaju katli and cut it in diamond shape.
  • Let this cool completely before serving.
