Richo’s oysters Kilpatrick

The hallmark ingredients in oysters Kilpatrick are bacon and Worcestershire sauce, but this recipe adds heat with a little Tabasco, and booze with a splash of vermouth.

Ingredients

  • 8 oysters
  • 1 tbsp tomato sauce
  • ½ tsp horseradish
  • 1 tbsp sweet vermouth
  • 2–3 drops Tabasco sauce
  • 1 tbsp Worcestershire sauce
  • 100g shredded bacon

Instructions

  1. Place oysters on a griddle pan.
  2. In a small jug, mix tomato sauce, horseradish, sweet vermouth, Tabasco sauce and Worcestershire sauce until it comes together.
  3. Put ½ tsp sauce on each oyster. Top with bacon. Using a gas torch, heat until bacon cooks and is caramelised, while oyster underneath stays raw. Serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
