Mushroom pilafi
Ingredients
250g mushrooms
1 cup long grain rice such as basmati
1 onion, diced
1 garlic clove, diced
½ cup chopped parsley
2 sprigs fresh thyme
3 tbs extra virgin olive oil
Method
Heat oil in a heavy based saucepan and add onion. Cook until soft then add the garlic, thyme and mushrooms. Continue to cook, stirring occasionally until the mushrooms soften. Add the rice and stir to coat with oil. Add 2 cups of hot water and season with salt and pepper. Simmer on low heat with the lid on until the rice is cooked and all the water has been absorbed (about 10 to 15 minutes). Remove from the heat and mix through the parsley. Place a clean tea towel between the saucepan and lid and let it stand for 10 minutes before serving.
