Apple and Rhubarb Crumble
Ingredients
Filling:
4 stalks rhubarb
1 orange
1 tsp vanilla paste
2 tbs honey
4 apples, diced
Crumble:
1 cup oats
100g butter, diced
¼ cup plain flour
1 tsp cinnamon
¼ chopped walnuts
2 tbs brown sugar
Method
- Heat oven to 180C. Remove leafy part of rhubarb and cut stems into 5cm pieces and place in a shallow baking dish
- Zest and juice the orange. Mix the orange juice with the vanilla paste, honey and zest and pour over rhubarb
- Bake for 15 mins or until just soft. Set aside.
To make crumble:
- Place oats, flour, cinnamon, walnuts, sugar and butter in a bowl and using your fingers rub the mixture until it resembles a rough crumb
- Peel, core and dice apples
- Take a medium baking dish (or 6 individual ones) and place in the apples and rhubarb (spread evenly)
- Add the crumble on top and bake for 15 minutes
- Serve with thick cream or yogurt
