Apple puffs

"An apple pie by any other name (or form) would taste as sweet." And that goes for these hand pies of crisp and golden pastry filled with apples baked until soft in cinnamon, brown sugar and lemon juice.

Ingredients

  • 3 medium granny smith apples, peeled and diced
  • ½ tsp ground cinnamon
  • 1 tbsp brown sugar
  • 1 tbsp lemon juice
  • plain flour, for dusting
  • 2 sheets frozen puff pastry, defrosted
  • 1 large egg, lightly beaten
  • caster sugar, for sprinkling
  • ice-cream, to serve

Instructions

  1. Preheat oven to 220˚C (fan-forced 200˚C). Line 2 baking trays with baking paper.
  2. In a large bowl, combine the apples, cinnamon, brown sugar and lemon juice.
  3. Lightly dust the bench with flour to prevent the pastry from sticking. Cut each pastry sheet into four squares.
  4. Using a spoon, scoop a small portion of the apple mixture into the centre of each pastry square. Fold the pastry across diagonally to form a triangle, then transfer to the lined baking trays at least 5 cm apart.
  5. Using a fork, crimp together the edges. Cut three small slits into each pastry, then brush with the beaten egg and sprinkle with sugar.
  6. Bake for 17-20 minutes or until golden brown. Transfer to a rack to cool slightly and serve with ice cream.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
