Ingredients
- 3 medium granny smith apples, peeled and diced
- ½ tsp ground cinnamon
- 1 tbsp brown sugar
- 1 tbsp lemon juice
- plain flour, for dusting
- 2 sheets frozen puff pastry, defrosted
- 1 large egg, lightly beaten
- caster sugar, for sprinkling
- ice-cream, to serve
Instructions
- Preheat oven to 220˚C (fan-forced 200˚C). Line 2 baking trays with baking paper.
- In a large bowl, combine the apples, cinnamon, brown sugar and lemon juice.
- Lightly dust the bench with flour to prevent the pastry from sticking. Cut each pastry sheet into four squares.
- Using a spoon, scoop a small portion of the apple mixture into the centre of each pastry square. Fold the pastry across diagonally to form a triangle, then transfer to the lined baking trays at least 5 cm apart.
- Using a fork, crimp together the edges. Cut three small slits into each pastry, then brush with the beaten egg and sprinkle with sugar.
- Bake for 17-20 minutes or until golden brown. Transfer to a rack to cool slightly and serve with ice cream.
