Lamb barbacoa with consomé, salsa verde and tortillas
This is one of Mexico's most traditional dishes, originally from the city of Hidalgo in Pachuca. Traditionally these are cooked in a pit covered with banana leaves, but here, a deep roasting tray is lined with banana leaves before lamb is covered in the marinade. Chef Alejandro Huerta says this was his mum's favourite dish to eat on Sundays with the family.

This is Danielle Alvarez's recipe from her childhood, with layers of spices such as cumin, cinnamon and nutmeg. Served with steamed white rice and either sweet "platano maduro” or tostones.
