It’s unbelievable how simple this recipe is - the hardest part is remembering to baste it regularly and it’s important that you do this to make sure that the honey doesn’t burn, so the bacon gets a sensational glaze. The longer you cook it for the more chance you have of burning it so remember to use a timer. I have learnt this from experience!
Ingredients
- 750 g whole piece smoked streaky bacon, skinless
- 200 g runny honey
Instructions
1. Preheat the oven to 180°C.
2. Put the piece of bacon on to a baking tray and cover with the runny honey. Place into the oven. After 10 minutes, baste the bacon in the honey. Return to oven and cook another for another 10 minutes. Repeat the basting and put back into the oven. Cook for 5 minutes and repeat the process. Keep cooking the bacon until the honey is thick and has glazed the bacon all over. It will take about 40-50 minutes in total.
3. Remove from the oven. Take bacon out of the tray and leave to rest on a chopping board.

• This is perfect for your Christmas Day table and any leftovers will be fantastic on Boxing Day. It's so versatile, great hot or cold.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
