For a long time, Indian-born, UK-based chef Atul Kochhar would hear people tell him cooking Indian food took too long. His method? Cut time by pre-preparing sauces and pastes in freezable batches, in advance. "I take the pain out of cooking by pre-preparing a few things like , and in many recipes I have used tomato paste in place of fresh tomatoes," Kochhar explains.
