Sourdough may have been the star on the table in 2020, but there's a new generation of bread recipes ready to make their mark. From TikTok's viral cloud bread to Japanese Hokkaidō milk bread, here are six recipes for you to try. They are all super easy to bake and will teach you how to turn commonly wasted ingredients into magical loaves of joy. Let's get baking!

Cloud bread

If you're on TikTok then you'll be no stranger to the viral sensation called . This fluffy, giant bread is a cross between a sponge cake, marshmallow, and meringue.
It's all the rage right now and when you see how easy it is to make, you'll understand why.

is naturally low carb, high in protein and can be made from just egg whites, sugar and corn starch. The egg whites produce tiny air bubbles which give the loaf a fluffy texture and the sugar adds a subtle sweetness.

Bakers have been inventing their own versions of this trend by adding food colouring, flavour extracts, chocolate, cream cheese, nuts and the list goes on. Give it a go, the possibilities are endless.

Mayonnaise bread

Want to know the secret to moist and soft bread? The answer is mayonnaise. Although mayo seems like an odd ingredient to include in baked goods, the result is anything but.

All that's required to make is self-raising flour, baking powder, milk and mayo. The mayonnaise works as an egg replacement to create a moist and tender bread and is an ingredient that can be found in most household pantries.

Add extra flavour by stirring in grated cheese, chopped spinach, sun-dried tomatoes or chopped olives. You can also sprinkle it with your favourite seeds. It may sound peculiar, but I promise you, it's delicious.

Japanese milk bread

This next irresistible bread recipe is perfect for using up that carton of milk in the fridge that's about to expire. or shokupan is a Japanese loaf known for its feathery centre and golden crust. It's made using the tangzhong method, which produces an Asian roux and helps make the bread tender.  

The loaves are lightly sweetened and have a rich, milky flavour that pairs perfectly with butter or a drizzle of condensed milk. It's the ultimate two-for-one breakfast treat.

Ice-cream bread

What do you get when you combine ice cream and bread? A magical loaf that sounds impossible but is bound to impress. All you need to make is your favourite ice cream flavour and self-raising flour. Make sure the ice cream is melted before use so you get a caky loaf with a crunchy crust.
The bread isn't overly sweet so can be enjoyed for breakfast or as a snack. However, it also makes a delicious dessert when topped with fresh fruit (and an extra scoop of ice cream, of course).
