Greek Mushroom Pilafi Recipe

Mushroom Risotto

Mushroom pilafi is the Greek version of mushroom risotto. Angela Nicolettou shares with us a tasty and quick version of a nutritious recipe chock a block full of vitamins and minerals beneficial for the skin!


Greek Mushroom Pilafi Recipe:

Ingredients:

250g mushrooms

1 cup long grain rice such as basmati

1 onion, diced

1 garlic clove, diced

½ cup chopped parsley

2 sprigs fresh thyme

3 tbs extra virgin olive oil

Method:

  • Heat oil in a heavy based saucepan and add onion
  • Cook until soft then add the garlic, thyme and mushrooms
  • Continue to cook, stirring occasionally until the mushrooms soften
  • Add the rice and stir to coat with oil
  • Add 2 cups of hot water and season with salt and pepper
  • Simmer on low heat with the lid on until the rice is cooked and all the water has been absorbed (about 10 to 15 minutes)
  • Remove from the heat and mix through the parsley
  • Place a clean tea towel between the saucepan and lid and let it stand for 10 minutes before serving
