Toast sundae

Inspired by the many toast dessert trends coming out of Asia such as Korea’s injeolmi or Japan’s honey butter toast, Adam Liaw shares his tips for a buttery toast sundae. A fun alternative to French toast for breakfast!

Ingredients

  • ½ loaf soft white bread, or brioche (unsliced)
  • 75 g softened butter
  • 75 g caster sugar
  • 1 tsp vanilla extract
  • Golden syrup, fresh berries, whipped cream and ice-cream, to serve

Instructions

  1. Use a sharp serrated knife to cut the bread into 3 cm thick slices. In a medium bowl, combine the butter, sugar and vanilla extract. Spread about half the sweetened vanilla butter generously over one side of the bread slices, ensuring that you spread all the way to the edges.
  2. Heat a large frying pan over medium heat, then fry the bread, buttered-side down, until golden. Just before you flip, spread the remaining side of bread with the vanilla butter, again, all the way to the edge, then flip. Cook until golden on the second side. Repeat with the remaining bread slices.
  3. Divide the toast between plates and drizzle with golden syrup. Serve with fresh berries, whipped cream and ice-cream.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
