Ingredients
- 1 cucumber, thinly sliced in rounds
- 1 x (340 g) can spam
- ½ pineapple, peeled, cored and sliced
- 4 cups cooked rice or ramen noodles
- pickled ginger, furikake, sriracha, to serve
- 2 nori sheets, to serve
Glaze
- 2 tbsp soy sauce
- 1½ tsp brown sugar
- 1 tsp rice vinegar
- ¼ tsp granulated garlic
- ¼ tsp black pepper
Cucumber salad
- 1 tsp soy sauce
- ½ tsp brown sugar
- 2 tbsp rice vinegar
- 1 tsp black pepper
- ½ tsp granulated garlic
- ½ tsp salt
- ½ tsp chilli flakes
Instructions
- For the glaze, combine all the glaze ingredients in a small bowl and set aside.
- To make the cucumber salad, combine the ingredients in a medium bowl, add the sliced cucumber and toss until well mixed. Set aside.
- Slice the spam into 6 equal slices. In a large frying pan over-medium high heat, cook the spam for 2-3 minutes on each side, or until light golden brown. Add the glaze mixture to the pan and cook, for 2-3 minutes, or until the sauce is thickened. Turn the spam slices to coat in the sauce.
- Remove the spam to a plate and remove the frying pan from the heat. Add the pineapple to the pan and turn to coat in the sauce. Set the pineapple aside with the spam.
- To serve, divide the cooked rice or noodles between bowls, then top with the spam, pineapple, pickled ginger and cucumber salad. Sprinkle furikake over the spam and pineapple and drizzle with sriracha. Crumble half a sheet of nori over your bowl. Serve.
