Ingredients
- ½ cup (125 ml) olive oil
- 5 garlic cloves, thinly sliced
- ½ tsp chilli flakes
- 1 cup (250 ml) white wine
- ¾ cup tomato passata
- 1 cup cherry tomatoes
- 1 tsp fish sauce (optional)
- 500 g spaghetti
- 600 g pipis or clams, purged
- ½ cup finely chopped flat-leaf parsley
Instructions
1. Bring a large saucepan of water to the boil and salt it for cooking the pasta.
2. Heat a large frying pan (large enough to hold the pipis/clams and pasta) over medium heat and add the olive oil and garlic. Fry for about a minute, or until the garlic starts to brown around the edges, then add the chilli and white wine. Cover and simmer for a minute, then add the passata, cherry tomatoes and fish sauce (if using). Add the pasta to the simmering water at this point.
3. Simmer the tomato mixture for 3 - 5 minutes until the cherry tomatoes start to burst. Add the pipis, cover and shake the pan. Allow the pipis to cook for about 3 minutes until about ½ of them are opened.
4. At this point the spaghetti should be about two-thirds cooked. Transfer the spaghetti to the pipis with about 1 cup of the pasta water. Stir the spaghetti through the pipis until the spaghetti is al dente and the pipis are all opened. Stir through the parsley and serve.
