Ingredients
- 1 long cucumber, halved lengthways and seeded
- sea salt flakes, to taste
- 100 g softened salted butter
- 8 semi-frozen slices wholemeal bread
- 300 g fresh goat cheese with dill
- 300 g sliced smoked salmon
- 2 tbsp baby capers, rinsed and drained
- 1 tbsp chopped dill, plus extra sprigs to serve
- salt and pepper, to taste
- lemon wedges, to serve
Serves 4 as part of a high tea.
Instructions
- Ensure all the seeds are removed from the cucumber, then sprinkle the cucumber halves with salt. Press the cucumber between 2 sheets of paper towel to extract any excess water. The aim is to reduce as much moisture as possible as you don't have soggy sandwiches.
- Butter each slice of bread. Spread the goat cheese generously over 4 slices of bread. Top with a layer of smoked salmon and cucumber, a sprinkling of capers and finely chopped dill, then season with salt and pepper.
- Top with another slice of buttered bread. Trim the crusts and cut diagonally to produce 4 triangles each. Plate and serve with a lemon quarter and sprig of dill.
