Ingredients
- 3 bunches broccolini, trimmed, thick stalks halved
- 2 tbsp olive oil
- Salt and black pepper
- 1 lemon, halved
- 4 garlic cloves, crushed
- ½ cup parmesan cheese, grated
- ¼ cup flaked almonds
Instructions
- Preheat the oven to 200˚C. Line a baking dish with baking paper. Drizzle the broccolini with olive oil and toss well to coat. Season with a generous pinch of salt and black pepper.
- Add the broccolini and the lemon halves (flesh-side down) to the tray. Roast for 8 minutes.
- Remove the tray from the oven and turn the broccolini. Add the garlic and parmesan to the tray and roast for a further 8-10 minutes, or until the cheese melts and the garlic is fragrant.
- While the broccolini is roasting, heat a small frying pan over medium-high heat. Add the flaked almonds and cook, tossing occasionally, until toasted and golden. Remove from the heat and allow to cool.
- Transfer the roasted broccolini to a large serving dish and squeeze over the charred lemon juice. Sprinkle with the toasted flaked almonds and serve.
