Ingredients
- ⅓ cup (80 ml) vegetable oil
- 600 g chicken thigh fillets, cut into 3 cm pieces
- 3 garlic cloves, roughly chopped
- 1 bunch choy sum, cut into 3 cm lengths
- 1 tsp chicken stock powder
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 2 tbsp dark soy sauce
- 1 tsp sugar
- 1 kg Hokkien noodles
- Salt and white pepper, to season
- 6 medium spring onions, thinly sliced
- 3 cups bean sprouts
- Chilli sauce, to serve
Instructions
- Heat the oil in a large, heavy-based saucepan over medium heat. Add the chicken and sear for 3 minutes per side, or until well-browned. Stir through the garlic and stir-fry for 1 minute, followed by the choy sum. Add the stock powder, the sauces, sugar and 1 ½ cups water. Bring to a simmer. Taste the liquid – it should be strong-tasting and salty.
- While the chicken is cooking, using a paring knife, poke a few holes into the pack of Hokkien noodles and microwave for 4 minutes. Massage the bag to break up the noodles, then add them to the pan with the chicken. Toss well to coat and cook for a further 3 minutes, or until the noodles have absorbed all the liquid.
- Season to taste with salt and white pepper as you like. Stir through the spring onion (reserve a little to garnish!) and bean sprouts. Transfer the quick chicken noodles to a large serving platter, sprinkle with the reserved spring onion and serve with the chilli sauce.
