Ingredients
- 500 g spaghetti
- olive oil, for frying
- 4 garlic cloves, thinly sliced
- 4 tomatoes, finely diced
- 1 large bunch basil
- 1 kg green king prawns, peeled
- 1 whole lemon, zested and juiced
- salt and black pepper
Instructions
- Bring a large saucepan of water to the boil and cook pasta for 2 minutes less than the directions on the packet. Reserve a cup of pasta water for the sauce before draining.
- Meanwhile, heat plenty of olive oil in a large frying pan over medium-high heat. Add the garlic and tomato and cook, for 5-6 minutes, or the tomatoes are just softened.
- While the sauce is cooking, roughly chop the basil, reserving a few whole leaves for garnish.
- Add the prawns to the frying pan and stir through until just cooked. Add some of the pasta water to loosen the sauce. Stir through the chopped basil leaves, lemon zest and juice.
- Toss the pasta through the sauce and add a little more pasta water, if required and an extra drizzle of olive oil.
- Season with salt and black pepper to taste and garnish with the reserved basil leaves.
