Ingredients
- 260 g (1 cup) natural runny peanut butter (no added oil or sugar)
- 100 ml maple syrup
- 100 g (¾ cup) oat flour or other flour of your choice
Cooling time: 10 minutes
Instructions
- Preheat the oven to 180°C (fan-forced 160°C). Line a baking tray with baking paper.
- Place the peanut butter and maple syrup in a bowl and stir with a spatula until it forms a creamy paste. Fold in the flour and stir until it forms a dough.
- Divide the biscuit dough into 12 pieces. Roll each piece into a ball and place on the lined tray, leaving about 2 cm between each. Using a fork, gently flatten the biscuits. They won't expand while baking, but you don't want the biscuits to touch each other.
- Bake for 12–18 minutes or until the sides are golden brown. Remove from the oven and stand on the tray for 10 minutes, then transfer to a cooling rack. Be patient; they will get crunchier with time. After 3 hours, they will have the most beautiful crunchy texture.
Note
• Store the biscuits for up to 2 weeks in an airtight container at room temperature. You can freeze the cooked biscuits in an airtight container or bag. Defrost the day before at room temperature.
