Ingredients
- 300 g peeled green king prawns (cleaned and patted dry)
- 2 garlic cloves
- 1 tsp white pepper
- 1 tsp sea salt
- 2 spring onion stems
- 1 lemon, zested
- 1 tsp sesame oil
- vegetable oil, to deep fry
- 1 cup sesame seeds
- baguette cut into 1 cm rounds, or white bread cut into ¼ squares left to dry overnight
- 1 cup soy milk
- 1 tbsp apple cider vinegar
- 5 g table salt
- 2 cups (500 ml) vegetable oil
- dried chilli flakes, to taste
Instructions
- Heat a large heavy-based saucepan with enough vegetable oil to deep fry in.
- While the oil is heating, combine the prawns, garlic, white pepper, salt, spring onion, lemon zest and sesame oil in the bowl of a food processor. Blitz into a paste.
- Spread prawn mix onto toast and press on sesame seeds. Fry with prawn mix side facing down for 2-3 minutes, flip over and fry bottom side.
- Meanwhile, place the soy milk, vinegar and salt in a jug for the mayonnaise and use a stick blender to combine and form a vortex. With the motor running, gradually add the vegetable oil in a slow, steady stream until the mixture has thickened and emulsified. Fold in chilli flakes to taste. This will make more than you need for this recipe, but it will keep well in the refrigerator for 2 weeks.
- Serve the prawn toasts with the chilli mayonnaise for dipping.
