Ingredients

  • 75 g (½ cup) plain flour
  • 1 tbsp ground lemon myrtle
  • Salt and pepper, to taste
  • 8 chicken drumsticks
  • 2 tbsp olive oil
  • 1 brown onion, thickly sliced
  • 2 garlic cloves, finely chopped
  • 1 tbsp Moroccan seasoning
  • 405 ml can apricot nectar
  • 40 g packet French onion soup mix
  • 8 dried apricots, quartered
  • Toasted flaked almonds, to serve
  • Sweet potato chips (oven fries), dusted in salt bush and salt, to serve

Instructions

  1. Place the flour and lemon myrtle powder in a shallow dish. Season with salt and pepper and stir to combine well. Toss the chicken pieces in the flour and shake off the excess.
  2. Heat 1 tablespoon oil in a large, deep heavy - based frying pan over medium heat. Cook the chicken, in batches, for 2 - 3 minutes each side or until golden, adding extra oil if needed. Transfer to a plate.
  3. Heat the remaining oil in the pan. Add the onion and garlic and cook, stirring occasionally, for 5 minutes or until soft. Sprinkle the Moroccan seasoning over the onion and stir well to combine. Stir in the apricot nectar, then add the soup mix and bring to the boil. Reduce the heat to low, return the chicken to the pan, then cover and cook for 20 minutes.
  4. Add the apricots to the pan, pushing them into the sauce. Cook, uncovered, for another 20 - 25 minutes or until the chicken is cooked through and the sauce has thickened.
  5. Serve scattered with toasted flaked almonds and salt bush dusted sweet potato chips on the side.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
