Lamb leg with baharat oil

Cooking a whole leg of lamb in under 30 minutes? Try cutting it into thick steaks to speed things up, allowing this typically long-cooking piece of meat to be used for quicker weeknight meals, when time is of the essence.

Ingredients

  • 1 boneless lamb leg, around 1.2kg
  • 1 tbsp each sea salt flakes and black pepper
  • ¼ cup olive oil, plus extra to rest
  • 1 cup thick yoghurt, to serve
  • 1 tbsp each roughly chopped parsley and mint
  • 1 lemon, cut into wedges
For the baharat oil
  • 2 tbsp olive oil
  • 2 tsp baharat (or garam masala)
Resting time: 10 minutes

Instructions

  1. Cut the lamb leg across the grain into steaks around 6 cm thick. Place in a large bowl or on a tray and season with the salt and pepper. Drizzle with the olive oil and toss lightly to coat.
  2. Heat your barbecue grill for about 10 minutes, or until very hot. Barbecue the lamb for 15 minutes, turning every 3-4 minutes, or until medium-rare. Remove to a clean tray, drizzle with a little more olive oil and allow to rest for 10 minutes.
  3. While the lamb is cooking, make the Baharat oil by heating 2 tbsp olive oil in a small saucepan, then stir through the Baharat, swirling to coat until just fragrant, then remove from the heat and allow to cool slightly.
  4. To serve, return the lamb to the barbecue to reheat, 1-2 minutes. To serve, spoon the yoghurt over a serving tray. Thickly slice the lamb and place over the yoghurt. Spoon over the Baharat oil and sprinkle with the herbs. Serve with lemon wedges on the side.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
