Ingredients
- 1 loaf soft white bread, unsliced (straight sided, not high top)
- 150 g unsalted butter, melted
- salt
- ½ cup honey (in bottle or jar)
To serve
- 6 Anzac biscuits
- good-quality vanilla ice cream
- good-quality caramel ice cream
- 300 ml thickened cream, whipped
- extra honey and fresh honeycomb
Instructions
- Preheat the oven to 200˚C. Remove the end crusts from the loaf and cut the remaining loaf into 8-10 cm blocks. Using a serrated knife, cut the interior of the white bread away from the crust, leaving ½ cm of crust intact. Cut the crumb box into 4 pieces, maintaining the shape as much as possible, as this will be returned to the toasted loaf.
- Brush the bread cubes and crust generously with butter, sprinkle with salt and bake for about 8 minutes, or until golden and toasted.
- Return the toasted bread cubes back into the bread box frame.
- Warm the honey by putting the whole bottle or jar in a pot of hot water.
- Crush the Anzac biscuits with a mortar and pestle and scatter over the bread. Drizzle everything with plenty of honey and serve with scoops of ice cream, whipped cream and fresh honeycomb.
