Ingredients
- 450 g (3 cups) strong (00) flour, plus extra for dusting
- 7 g (1 sachet) instant yeast
- 300 ml warm water
- fine salt, to taste
Pizza sauce
- 3 tbsp tomato paste
- 2 tsp tomato sauce
- pinch dried basil
- pinch dried oregano
- ½ tsp sugar
- extra virgin olive oil, for drizzling
Toppings
- prosciutto
- olives
- crumbled cheeses (try washed rind, soft blue or marinated feta)
- basil leaves
Resting time: 30 minutes
Instructions
- Preheat the oven to 220˚C. Place 2 heavy–based baking trays in the oven to preheat.
- For the pizza dough, place the flour, yeast and warm water in the bowl of an electric stand mixer fitted with a dough hook. Knead on low speed until the dough comes together, then add a pinch of salt and mix again.
- Transfer the dough to a lightly oiled bowl, cover and stand in a warm place for 20 – 30 minutes or until doubled in size.
- Meanwhile for the pizza sauce, combine all the ingredients in a bowl, then drizzle with olive oil.
- Knock the air out of the dough and transfer to a lightly floured work surface. Cut the dough in half, then roll out each half into a thin round. Place on a piece of baking paper and prick the dough with a fork. Transfer the dough on the paper to the preheated baking trays and bake for 8 – 10 minutes to par cook them.
- Remove the pizzas from the oven, brush with olive oil and the pizza sauce, then scatter with the toppings. Bake for another 10 minutes or until golden.
