Ingredients
- 2 eggs, room temperature
- 250 g chow mein noodles (see Note)
- 1 medium carrot, thinly sliced
- 2 tsp gochujang (Korean chilli paste)
- 2 tbsp garlic dip (toum)
- sesame oil, for drizzling
- 1 tbsp chilli crisp oil
- ½ cup roughly chopped spring onions
- 1 cup roughly chopped baby spinach leaves
- pickled ginger, black sesame seeds, to serve
Instructions
1. Bring a medium saucepan of water to the boil. Add the eggs and cook for 7 minutes, then remove to an ice bath to cool. Once cooled, peel and set aside.
2. Bring a second saucepan of salted water to the boil and cook the noodles according to the package instructions. Two minutes before the noodle cook time is complete, add the sliced carrot to the simmering noodle water. Reserve some noodle water, then drain the noodles and carrot and transfer to a large bowl.
3. Add the gochujang, garlic dip, a generous drizzle of sesame oil, chilli crisp oil, spring onion and baby spinach to the bowl and toss well to combine. Add the reserved noodle water for a saucier consistency.
4. Slice the boiled eggs. Divide the noodles between bowls and top with the boiled egg, pickled ginger and a sprinkle of black sesame seeds with extra chilli crisp oil, if you like!
Note
The brand of fresh wheat noodles used was Evergreen lei mein noodles (500 g) which can be located in your local Asian grocery supermarket. This quantity can be substituted with two instant ramen cakes.
