Ingredients
- 2 kg mixed apples, half peeled, cored and cut into 2 cm chunks
- 50 g soft brown sugar
- 50 g caster sugar
- 1 lemon, juiced
- 2 tbsp brandy or dark rum (optional)
- vanilla ice cream, to serve
Crumble
- 200 g cold unsalted butter, cubed
- 150 g soft brown sugar
- 60 g golden syrup
- 300 g wholemeal flour
- 1 tsp ground ginger
- ½ tsp baking powder
- ½ tsp ground cinnamon
- ½ tsp flaked sea salt
- ¼ tsp ground cloves
- ¼ tsp ground cardamom
Instructions
- Preheat a fan forced oven to 200˚C.
- For the crumble mixture, place the ingredients in a food processor and process to a rough crumble. You can rub the sugar through the other ingredients in a bowl with your hands if you prefer.
- Combine the apple with the sugars, lemon juice and alcohol in a saucepan over medium heat and cook for about 5 minutes or until the apples are warm and slightly softened. Transfer to a baking dish and top with as much of the gingerbread crumble topping as you like.
- Bake for 25–30 minutes and serve with ice cream.
