Ingredients

  • 2 tbsp olive oil
  • 4 spicy Italian sausages, roughly chopped
  • 1 garlic clove, bruised
  • 1 zucchini, roughly chopped
  • ¼ small pumpkin, roughly chopped
  • 1 sweet potato, roughly chopped
  • 1 carrot, roughly chopped
  • Salt and black pepper
  • 1 can butter beans, drained
  • 250 g truss cherry tomatoes
  • Marinated goat’s cheese, to serve
  • 120 g baby spinach leaves, to serve

Instructions

  1. Preheat the oven to 200˚C. Line two baking trays with baking paper. In a large bowl, combine the oil, sausages, garlic, zucchini, pumpkin, sweet potato and carrot. Sprinkle with a generous pinch of salt and black pepper and toss well to combine, then spread out between the two trays in a single layer.
  2. Bake for 20 minutes, then remove the trays from the oven. Stir the vegetables, then top with the drained butter beans and cherry tomatoes. Bake for a further 10-15 minutes, or until the vegetables are tender.
  3. Remove the trays from the oven and spoon over some marinated goat’s cheese and the baby spinach leaves. Toss to coat on the tray, until the spinach is lightly wilted.
  4. Divide the vegetable and sausage bake between plates and serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
