Ingredients
- 3 whole plantains
- Vegetable oil, for frying
- Salt
- 3 cooked corn cobs, kernels stripped
- 200 g green beans, blanched, cut into 2 cm lengths
- 2 avocadoes, diced
- 1 each green, red and yellow capsicums, finely chopped
- 3 spring onions, thinly sliced
- 1 small red onion, finely chopped
- 1 cup flat-leaf parsley leaves, roughly chopped
- 1 cup basil leaves, roughly chopped
- 2 tbsp pepitas
- 1 cup cooked quinoa
- 1 lemon, cut into wedges, to serve
For the spicy orange dressing
- ½ cup freshly squeezed orange juice
- ¼ cup (60 ml) olive oil
- 2 garlic cloves, finely grated
- 2 cm x 3 cm piece ginger, finely grated
- 1 habanero chilli, finely chopped
- Salt and black pepper
Instructions
- Trim the ends of the plantains, then peel and cut into half-moons, 7 mm thick.
- Heat a generous drizzle of vegetable oil in a large frying pan over medium-high heat. Once hot, fry the sliced plantain for 2-3 minutes on both sides, or until golden. Transfer the fried plantains to a paper towel-lined plate and sprinkle with salt.
- To make the spicy orange dressing, combine the ingredient in a screw-top jar and shake well to combine. Season to taste with salt and pepper.
- Combine the remaining ingredients for the salad (except the lemon) with the fried plantains in a large salad bowl and drizzle with the spicy orange dressing. Toss lightly to combine.
- Serve the fried plantain salad with lemon wedges for squeezing.
