Ingredients
- 2 chicken breast fillets
- ¼ cup soft goats cheese
- 2 tbsp pesto
- sea salt and black pepper, to season
- 4 slices streaky bacon
- olive oil, for drizzling
- steamed green beans
- grape or cherry tomatoes
Instructions
- Preheat the oven to 220˚C (fan-forced 200˚C).
- Gently pound the chicken breasts between two pieces of plastic wrap until about 1.5 cm-thick.
- Remove the top piece of plastic wrap, then spread the goats cheese and pesto over the top of each breast. Season with black pepper.
- Roll the chicken breasts up lengthways, then wrap in streaky bacon, using toothpicks to secure.
- Heat a good drizzle of oil in a small heavy-based, oven-proof frying pan. Add the chicken and cook, without turning, for 3 minutes, then brown on all sides. Transfer the pan to the oven and bake for 15 minutes. Remove from the oven and rest for 10 minutes.
- Thickly slice the chicken, then serve with steamed beans and cherry tomatoes.
