Cheese triangles with blackened cherry tomato sauce

Cooking the tomatoes until a little blackened adds depth to their flavour and turns up their best sweet and savoury qualities. The tartness of the salsa is just the thing for golden-edged, cheese-filled pastries.

Ingredients

  • 200 g grated cheddar or tasty cheese
  • 200 g Greek-style feta, crumbled
  • 2 eggs, plus 1 extra for brushing
  • black pepper, to season
  • 2 sheets butter puff pastry
Cherry tomato salsa
  • 1 large green chilli, chopped into 2 cm pieces
  • 1 brown onion, peeled and quartered
  • 2 garlic cloves, peeled and left whole
  • 500 g mixed cherry tomatoes
  • ½ cup finely chopped parsley
  • 1 lemon, juiced
  • 2 tbsp sherry vinegar
  • 1 tbsp sugar
  • extra virgin olive oil, for drizzling

Instructions

  1. Preheat an oven to 200°C (180°C fan-forced). Line a large baking tray with baking paper.
  2. Place the cheeses, 2 eggs and plenty of black pepper in a bowl and mix well.
  3. Cut each piece of puff pastry into 4 squares and place a large spoonful of filling in the centre. Fold into a triangle and crimp the edges with a fork or by folding them in on themselves as for an empanada or curry puff. Place on the lined baking tray. Beat the extra egg and brush the tops.
  4. Bake for 25 minutes or until risen and golden.
  5. Meanwhile, heat a large frying pan over high heat for the cherry tomato salsa. Add the chilli, onion and garlic and dry fry until blacken. Add the tomatoes and cook until lightly blackened. Place into a food processor with parsley, lemon juice, sherry vinegar, sugar and a drizzle of olive oil. Process into a chunky sauce. Serve with the cheese triangles.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
