Ingredients
- 4 Granny Smith apples, peeled, cored and thickly sliced
- 150 g (¾ cup) soft brown sugar
- 85 g (½ cup) dried sultanas
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ½ tsp vanilla extract
- a good pinch of salt
- 6 - 8 sheets filo pastry
- 100 g melted butter
- icing sugar, for dusting
- vanilla ice cream, to serve
Instructions
- Preheat a fan-forced oven to 180˚C. Place the apples, sugar, sultanas, cinnamon, nutmeg, vanilla and salt in a bowl and mix to combine.
- Lay a sheet of filo on a baking paper-lined baking tray and brush liberally with butter. Top with another sheet of filo and brush again with butter, then repeat with the remaining filo and butter.
- Pile the apple mixture along one long edge and roll up, tucking in the edges to form a single large roll, ensuring the seal is on the bottom. Brush with more butter and bake for 30 minutes until golden brown.
- Dust with icing sugar and serve with vanilla ice cream.
