Ingredients
- 100 g (1 cup) grated parmesan
- 500 g zucchini
- 1 large onion
- 5 eggs
- 150 g (1 cup) self-raising flour
- 100 g (1 cup) grated tasty or cheddar cheese
- 1 tbsp coarsely ground black pepper, plus extra to serve
- 50 g melted butter, plus extra for greasing
- green salad leaves, to serve
Cooling time: 20 minutes
Instructions
- Preheat the oven to 180˚C (fan-forced 160˚C). Butter a 20 cm x 30 cm lamington tin and scatter the base with ¼ cup grated parmesan.
- Peel the zucchini to remove any green parts. Using a box grater, grate the zucchini and onion into a large bowl. Add the eggs, flour, cheese, pepper, melted butter and ½ cup parmesan and stir to combine well. Press into the tin and scatter the top with the remaining parmesan. Grind over a little more black pepper.
- Bake for 30 minutes or until the slice is set. If you like, grill the top until lightly browned. Allow the slice to cool for about 20 minutes before slicing. Serve with dressed salad leaves.
