Ingredients
- 6 eggs
- ½ cup (125 ml) milk
- ¼ tsp ground coriander
- ¼ tsp ground cumin
- ¼ tsp turmeric
- ¼ tsp Kashmiri chilli powder
- ½ cup grated cheese
- ¼ cup roughly chopped coriander, plus extra to serve
- 1 large red chilli, finely chopped
- 1 large green chilli, finely chopped
- ½ red onion, finely chopped
- 8 cherry tomatoes, quartered
- salt and black pepper
- 6 thick slices white bread
- 25 g butter, cut into 2 cm cubes
- Sriracha, Tabasco or other hot sauce, to serve
Instructions
- In a large bowl, beat the eggs and milk together, then stir through the spices, cheese, coriander, chillies, onion and tomatoes. Season well with salt and pepper. Dip the bread slices in the egg mixture.
- Heat a medium frying pan over medium heat and add a little butter. With a slotted spoon place a dollop of the solids from the egg mixture into a non-stick frying pan and place the soaked bread on top. Cook until the cheese is melted, then flip the bread, add a little more butter and fry until the egg is set. Transfer to a plate, then repeat with remaining mixture and bread slices. To serve, scatter with extra coriander and serve with a little Sriracha, tabasco or other hot sauce.
