Ingredients
- 300 g rump steak
- ¼ tsp bicarbonate of soda
- 2 tbsp Shaoxing wine
- salt
- 3 tsp cornflour (2 tsp mixed with ½ cup cold water)
- ½ cup vegetable oil
- 500 g long-stemmed cauliflower, also called caulini or fioretto
- 2 slices ginger
- 1 small onion, sliced
- 3 garlic cloves, roughly chopped
- 1 tbsp salted black beans (Fu Chi brand, in jar)
- 1 tbsp oyster sauce
- ½ tsp sugar
Marinating time: 10 minutes
Instructions
- Slice the steak into very thin strips and in a medium bowl, combine with the bicarbonate of soda, ½ the Shaoxing wine, salt, 1 tsp cornflour and about a tablespoon of water. Set aside for about 10 minutes.
- Heat the oil in a wok over high heat. Cut the cauliflower into florets and fry for a minute or two until lightly wilted. Remove from the wok and drain. Add the beef to the oil and fry until lightly browned. Remove from the oil and drain.
- Drain the oil from the wok, leaving about 2 tbsp to continue frying. Add the ginger, onion, and garlic and fry for 1 minute, or until fragrant. Add the black beans and fry for a minute more.
- Return the beef and cauliflower to the wok and add the oyster sauce, remaining Shaoxing wine and sugar to the wok and toss to combine. If the wok is looking too dry add a touch of water. Thicken with enough of the cornflour slurry to form a sauce that coats the meat and vegetables and serve.
