Ingredients
- 2 chicken breasts
- Softened butter, for spreading
- 1 loaf sourdough, sliced
- ½ cup mayonnaise
- 1 avocado, sliced
- ½ lemon, cut into wedges
- 1 wedge parmesan cheese, thinly shaved, to serve
- 1 cos lettuce, leaves separated
- Salt and black pepper
Instructions
- Place the chicken breasts into a medium saucepan and cover with water. Bring to the boil, then reduce to a rapid simmer. Cook for 12 minutes, then remove from the heat and allow to stand for a further 10 minutes, or until the chicken is cooked through. Using tongs, remove the chicken to a medium bowl and allow to cool.
- Once cooled, use two forks to shred the chicken.
- To assemble the sandwich, generously butter the sliced bread, followed by a layer of mayonnaise and avocado slices. Squeeze some lemon juice over the avocado, then layer shaved parmesan cheese, shredded chicken, a generous pinch of salt and black pepper, followed by lettuce leaves and a second slice of bread. This sandwich can be served toasted or fresh.
