Ingredients
- 6 chicken drumsticks
- 2 medium potatoes, roughly chopped
- 4 carrots, cut into 5 cm lengths
- 2 corn cobs, cut into 5 cm lengths
- 1 brown onion, cut into thick wedges
- 2 tbsp chicken stock concentrate
- Salt and white pepper, to season
- 2 tomatoes, cut into thick wedges
Instructions
- Cut a deep slit all the way to the bone around halfway down each chicken drumstick.
- Place the chicken into a large, heavy-based saucepan and cover with cold water. Bring to the boil, then strain the liquid. Discard the cooking water, then rinse the chicken before returning to the pan.
- To the chicken, add the potatoes, carrots, corn and onion and cover with 3 litres of water. Stir through the chicken stock concentrate and season generously with salt. Bring to a simmer and then reduce the heat to very low and cook for 40 minutes. Add the tomatoes and simmer for a further 15 minutes. Season to taste with salt and white pepper, then serve.
