Sunshine mocktail

This sunshine mocktail is usually enjoyed beachside or in a private cabana. But you can still channel those island beach club vibes from your kitchen barstool with drink in hand.

Ingredients

  • ½ ripe banana
  • ¼ papaya (or passionfruit)
  • ¼ pineapple
  • 15 ml passion juice
  • 30 ml mango juice
  • 30 ml orange Juice
  • 15 ml lime juice

Instructions

1. Blend, strain and pour over ice.

2. Best served cold. Enjoy!

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
