Ingredients
- 200 g good-quality white chocolate
- 200 g good-quality dark chocolate
Setting time: Approx. 10 minutes
You'll need a palette knife and grouting comb for this recipe.
Instructions
1. Place the white chocolate and dark chocolate in separate bowls. Melt the chocolate or temper it if it contains cocoa butter. To temper the chocolate, heat each one in a plastic bowl in the microwave for 30 seconds at a time until you have 50% liquid and 50% pieces of chocolate. Stir it vigorously without additional heat until all the chocolate has melted. If you have some resistant buttons, you can gently heat the chocolate with a hair dryer while stirring.
2. Place the tempered white chocolate onto a stone surface and spread it out with a palette knife, working it backwards and forwards. Before it starts to set, comb the white chocolate.
3. Once the combed white chocolate is just set, repeat the process with the tempered dark chocolate, spreading it directly on top of the combed white chocolate.
4. Once the dark chocolate sets, place the metal scraper on the surface of the chocolate, and with firm pressure, scrape the chocolate, working away from yourself. This will create curls.
