Rhubarb crumble slice

Is this a biscuit or is this a dessert? Whatever it is, this airfryer recipe is delicious! The leftover syrup from the rhubarb is fantastic drizzled over vanilla ice cream, or stirred into cocktails, so don’t discard it.

Ingredients

  • 500 g (1 lb 2 oz) rhubarb, chopped into 2 cm (¾ in) chunks
  • 100 g (3½ oz / 1 scant cup) caster (superfine) sugar
  • 200 g (8 oz) cold unsalted butter, cut into small chunks
  • 275 g (9¾ oz / 2¼ cups) plain (all-purpose) flour
  • 125 g (5 oz/ ⅔ cup) light brown soft sugar
  • Pinch of salt
  • 2 tbsp + 1 tsp icing (powdered) sugar
Cooling time: about 1 hour.

Instructions

  1. Put the rhubarb and sugar into a small saucepan and cook over a low heat for about 10 minutes, until the rhubarb is soft. Drain the rhubarb through a sieve into a jug, keeping the pink syrup that is created. Set aside.
  2. In a food processor, whizz the butter, flour, sugar and a pinch of salt until the mixture looks like chunky breadcrumbs and is just starting to clump together. Line a 20 cm (8 in) square cake tin (pan) with foil and press about two-thirds of the crumble mixture into the base, levelling with the back of a spoon.
  3. Heat the air fryer to 160°C (325°F) and bake for 20 minutes, until golden and looking crisp.
  4. Once the base is baked, spread the prepared rhubarb over the top, then sprinkle on the remaining crumble topping. Return to the air fryer and bake for 15 minutes, until the top is golden. Leave to cool.
  5. Once cool, in a small bowl, mix the icing sugar with 1 tablespoon of the rhubarb syrup and drizzle this over the crumble before cutting into squares.

Note
This recipe was created in a 5.7-litre (6 quart) air fryer with one drawer. As air fryers can vary you may find you need to bake for a minute or two more or less.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
