If you have less tofu handy, then combine what you do have with a quarter or half an overripe avocado.
Ingredients
- 150 g dark chocolate (70% or more)
- 300 g silken tofu
- ¼ cup maple syrup
- 1 tsp vanilla extract
- A pinch of sea salt
Chilling time 20-30 minutes
Instructions
1. Melt chocolate in 30-sec bursts in the microwave or in a bowl on a pot over simmering water until smooth.
2. In a blender or food processor, whip the silken tofu, maple syrup, vanilla, melted chocolate and salt.
3. Spoon into four dessert glasses or small bowls and set in the fridge for at least 20 minutes or overnight.
4. Serve with fresh berries or crushed biscuits.
Cook's Notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
