Ingredients
- 1 cup brown sugar
- 30 g butter
- ½ tsp bicarbonate of soda
- ¾ cup roasted peanuts, chopped
- 2 cups popped popcorn, roughly chopped
- sea salt flakes, to taste
Instructions
- Line a tray with baking paper and set it aside.
- Add sugar to a medium saucepan with a splash of water over low heat. Cook, stirring until sugar has fully dissolved. Increase heat to medium-high (do not stir or move the pan at all during this stage!) and cook until the liquid is a dark amber colour and the temperature reaches 149ºC (hard crack stage). Quickly add butter and bicarbonate of soda, stir to combine then add peanuts and popcorn and stir quickly to coat.
- Pour mixture on the prepared tray, sprinkle with sea salt flakes and set aside for one hour to cool. Break into large pieces to serve, or in individual popcorn cups for the ultimate party snack.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
