Pan-fried pearl shell meat in garlic butter

Ingredients

  • 1½ tbsp butter
  • 1½ tbsp finely chopped garlic
  • 500 g pearl shell meat 
  • 1 tsp finely chopped coriander

Instructions

Add the butter to a frying pan over medium-high heat and when it begins to sizzle, add the garlic and cook for a minute or so but do not let it brown.

Add the pearl shell meat, season with salt and pepper, and cook on each side until the edges start to turn golden brown.

When the pearl shell has turned golden brown, add the coriander and stir to mix through.

Arrange on plate and it’s ready to serve.

Cook's Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
