Ingredients

  • 2 tsp fast-action dried yeast
  • 250 ml (9fl oz/generous 1 cup) tepid water
  • 3 tbsp whole milk
  • 2 eggs
  • 540 g (1lb 3oz/scant 2 cups) white strong bread flour, plus extra for dusting
  • 2½ tbsp granulated sugar
  • 1½ tsp salt
  • 100 g (3½ oz) butter, diced

Instructions

Mix together the yeast, water and milk directly in the dough mixer bowl. Whisk one egg until fluffy and fold into the yeast mixture.

Mix together the flour, sugar and salt in a separate bowl. Add the butter and break it up into the flour. Add the flour mixture to the yeast mixture and knead in a mixer for 10 minutes or until the dough is smooth and nice, twice as long if you are kneading by hand. Shape into a ball, put it back in the bowl and leave to rise covered with cling film until the dough has doubled in size, about 2 hours.

Flour the backside of your hand and knock back the dough, pressing all the air out of it. Cover with cling film and leave to rise for 1 more hour.

Take out the dough and place on a floured worktop.  Divide the dough into six equally sized parts. Place a piece of dough in your cupped right hand and shape into a bun by folding the edges until a nice, tight bun shape appearsFinish off by lightly rolling it out on a floured worktop to create the longer hoagie bun shape. Then cover the buns with a tea towel and leave to rise for 1 more hour.

Preheat the oven to 200°C/400°F/ gas 6. Place a large oven dish filled with water at the bottom of the oven. Beat the remaining egg together with a dash of water and brush the buns before you quickly and merrily shove them in the oven. Bake in the centre of the oven for 15–20 minutes, until the buns have turned a dark gold. Leave to cool.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
