Sweet pizzas are as much fun to make as the savoury variety. In Italy, a favourite is schiacciata, a fruit pizza made with grapes, traditionally during vintage. It is one of the simplest combinations: bread dough and grapes combine to make a tasty and inexpensive dessert.
Ingredients
- 750 g grapes (I use red and white for visual impact)
- 125 g raw sugar
Pizza dough
- 600 g plain white flour (best to use good strong baker's flour – higher in protein)
- 2 tsp sugar
- 4 tsp dried yeast
- 400 ml water (enough to make a firm dough)
- 1 tbs extra-virgin olive oil
- 2 tsp salt
Instructions
- Wash grapes, drain and toss with half the sugar. You can use the grapes whole if you don't mind the crunchiness but if it worries you, either de-seed them or use the seedless variety.
- For the pizza dough, mix one tablespoon flour, the sugar and yeast with a couple of tablespoons of tepid water and allow to stand for 20 minutes. This will activate the yeast.
- In a large bowl mix flour, 1 tablespoon olive oil and salt. Add yeast mixture and enough water to make up a firm dough and mix well. Cover bowl with damp tea towel and leave in a warm place for one hour.
- Move dough to a floured workbench and knead for 5 or 6 minutes.
- Prepare a pizza pan or similar flat tray and brush with a little light oil. Divide the dough into two and roll out the first of two base shapes for what will become a grape sandwich. Don't worry about making a perfect circle - rough enough is good enough. Place onto oiled pan.
- Dot some of the grapes over the base, leaving some space between them and sprinkle on a little more sugar. Roll the second base shape and place it over the first layer, pushing down around the edge to seal it. Add more of the grapes, pushing them in the valleys formed by the grapes underneath, and sprinkle with the remainder of the sugar. Bake in a hot oven (or wood-fired oven if you have one) at 200°C for about 40 minutes.
, season 1 to season 3, premieres on Tuesday 20 November at 8.30pm. The series airs Tuesdays at 8.30pm on SBS Food (Channel 33). After they air, episodes will stream at .
Cook's Notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
