This dip is so creamy and dreamy it's hard to believe it has no actual cream (or any dairy at all!) in it.

Ingredients

  • 1 x 400 g can cannellini beans
  • 200 g artichoke hearts
  • 2 tbsp lemon juice
  • garlic clove
  • ¼ cup extra-virgin olive oil
  • ½ tsp smoked paprika
  • salt to taste
  • pea shoots, for serving

Instructions

1. Drain and rinse cannellini beans. Put in a food processor.

2. Drain artichokes and add to food processor. Add lemon juice, garlic clove, olive oil, paprika and blend until smooth. Add salt to taste.

3. Top with pea shoots to serve.

Cook's Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
