Chocolate toastie

This toastie gets the full dessert-for-breakfast treatment: custard-soaked bread, fresh banana, oozing melted chocolate, a dusting of icing sugar. Because who said toasties have to be savoury?

Ingredients

  • 100 ml full-cream milk
  • 200 ml condensed milk
  • 3 eggs
  • pinch sea salt
  • pinch cinnamon
  • 2 tsp unsalted butter
  • 1 tsp grapeseed oil
  • 8 slices day-old sourdough bread, crusts removed
  • 2 bananas, sliced thinly lengthways
  • 60 g good-quality milk chocolate chips

Instructions

1. Use a whisk to combine the milk, condensed milk, eggs, salt and cinnamon in a bowl before transferring to a shallow dish.

2. Place the butter and oil in a frying pan over medium heat.

3. Dip each slice of bread into the condensed milk mixture and place it into the frying pan. Cook both sides until golden brown.

4. Arrange a layer of sliced bananas on one piece of bread, then sprinkle with chocolate chips. Place the second slice of bread on top like a sandwich and serve while hot.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
