Hailing from Italy, these irresistible fried balls of appley dough are a guaranteed crowd-pleaser. Serve warm and dusted with sugar.

Ingredients

  • 3 Granny Smith apples, peeled, cored, diced
  • 1 orange, peeled, diced
  • 4 eggs
  • 180 g caster sugar, plus extra, to serve
  • 30 ml grappa (see Note)
  • 30 ml rum
  • 30 ml fortified wine (such as sherry or port)
  • 160 g (1 cup) sultanas
  • 16 g sachet lievito vanigliato (see Note)
  • 400 g (2⅔ cups) plain flour
  • sunflower oil, to shallow-fry

Instructions

In a food processor, process diced apples and orange to a paste. Add eggs and process to combine. Add sugar, alcohol and a pinch of salt and process to combine. Transfer to a bowl and stir in sultanas and lievito vanigliato. Gradually stir in flour.

Fill a large frying pan one-third full with oil and heat over medium heat to 180ºC (or until a cube of bread turns golden in 10 seconds). Using a teaspoon, spoon balls of mixture into the oil and cook in batches for 2 minutes or until golden all over; they should begin to flip themselves over in the oil once cooked. Drain on paper towel and toss in extra sugar while warm.

Notes

• Grappa is a fragrant Italian pomace brandy, available from select bottle shops.

• Lievito vanigliato, a mixture of baking powder and vanilla, is available from Italian delis.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
