Rick Stein describes crab and sweetcorn soup as a "world classic". It was also the first dish he ever ate at a Chinese restaurant. This simple version lets good, simple ingredients shine, with flavours of fresh ginger, spring onion, soy sauce and rice wine.

"This is my take on a dish I had in Cádiz at a restaurant called La Merea (the Tide), which specialises in seafood and rice. It is one for garlic lovers, particularly as I – untypically for Spain – like to serve it with alioli as well," Stein says of this vibrant dish.

"This what you might call Spain on a plate, a sum-up dish of everything we love about Spanish cooking: serrano ham, chorizo, pimentón, tomatoes, garlic and onion. To these basic ingredients I have added green beans and peas; you could also add sliced, cooked new potatoes or chickpeas or the big butter beans called judion. Actually I first tried this in Cádiz and wasn’t particularly knocked out by it, but I love eggs with tomato sauce, so I did a bit of research and came up with my own version," Stein says of this recipe, perfect for a relaxed brunch.

Looking for something heartier? Pot-roasting, Stein says, is a great way to cook a slightly less tender cut of meat such as brisket. Here, the juicy brisket is served with herby dumplings, colcannon or mashed potato, and horseradish and apple sauce.

"For me, bread and butter is a favourite nursery pudding. It was originally intended to use up stale bread and with that thought in mind, I think that simple white bread is the right choice for this recipe. Some people choose brioche or some other enriched dough, but I prefer the simple plainness of the bread with the creamy vanilla voluptuousness of the custard. I like to add some sultanas or candied peel or both to my bread and butter pudding and finish it with an apricot glaze, having first caramelised the top with icing sugar under the grill," Stein says of this indulgent comfort food recipe.

Showing Rick Stein's interest in food from all corners, this dish takes inspiration from Iceland. "This is a very Icelandic combination; they love liquorice and chocolate," he says.
