Whether it's the plump, lush, sweet, peak-summer blueberries or the kind that deliver a sweet-sharp pop in the mouth, blueberries bring something special to baking. From Finnish breakfast buns to an Aussie damper, here are some of our favourite recipes.
With oats, chia seeds and bananas these muffins, from Irish cook Donal Skehan, will give you a great start to the day.

"This damper was inspired by the memory of an overnight camp on a friend’s property when we were 16. Finding wild blackberries growing along the banks of the creek we filled our damper dough with them and then baked it, wrapped in foil, in the hot coals… some food experiences are meant to be remembered ­— it was heaven!" says Anneka Manning, of the memory that prompted her to create this blueberry bake, which has a layer of blueberries (you can use fresh or frozen) and jam (any blueberry or mixed berry jam will do) in the middle. Delicious served warm with butter!

"I absolutely love this easy apple and blueberry cake. Firstly because it reminds me of my grandmother who taught me how to cook and secondly because it's whipped up really easily, all together in one bowl, and topped with beautiful fruit," says Donna Hay, of this easy but oh-so-pretty cake.

This classic loaf from Anna Olson is a one-bowl wonder, a simple loaf studded with blueberries and topped with lemony icing.

The cookies crumbled over the top add a great crunch and the blueberries add a touch of sweetness to this crustless baked cheesecake.

"This is a simplified version of a classic Claudia Roden recipe," explains Hugh Fearnley-Whittingstall of his version of a popular whole orange cake (a cousin to one of SBS Food's most popular cake recipes, the gluten-free from the early days of Food Safari ). "It uses whole, boiled citrus fruits, which are blitzed up in a processor with all the other ingredients and contribute a range of delicious, marmaladey flavours to the finished cake. I’ve added blueberries too, which burst juicily as you dig in with your fork. Boiling the fruit may sound like a fuss, but it’s really no more work than boiling an egg – albeit for an hour!"

Cream cheese dotted on the top just before baking makes this a very special crumble.

Inspired by a meeting in France, Gabriel Gaté shared this recipe for a puff pastry tart filled with custard and topped generously with blueberries. It's baked, then served cold, dolloped with cream.

The French really know how to make the most of blueberries! "A galette is the French term for a flat cake. I love the flavour of the cooked blueberries in this dish. You can also make eight small galettes using individual flan tins or muffin tins," says Gabriel Gaté of this recipe.

These Finnish buns are often eaten for breakfast with coffee. The sticky blueberry topping oozes over the dough, which is dotted with raisins and laced with cardamom.
