"I like to think of a tagine as a sort of stew with attitude. It’s really all about the spices and the slow cooking, giving all the wonderful flavours time to develop. What’s great is that you don’t need an authentic Moroccan tagine in order to recreate this beautiful food – a saucepan will still give you great results," Jamie says of this great comfort food recipe, inspired by his travels in Marrakesh. This take on the classic Italian dessert of tiramisù lightens it up by pairing mascarpone with ricotta cheese and adds a touch of orange zest. He shared this in Jamie's Easy Christmas Countdown, and it's a great recipe for a celebration meal at any time of the year, as it can be made a day or two in advance, or even frozen and then defrosted when needed.

Jamie says there are a handful of tiny but important details that create the ultimate roast potatoes. His recipe boils and chills the potatoes, then smooshes them down partway through roasting. This, he says, is the game-changer that finally yields these amazing, golden, crunchy on the outside, fluffy on the inside, roast spuds.

"What I’m giving you here is really more of a suggestion because the amount of Christmas pudding you’ll have leftover will really depend on how greedy your guests were on Christmas day. But personally, I love Christmas pudding and I think it’s almost worth having another pudding stashed away so you can make this as an after-Christmas treat," Jamie says of this idea, shared in Jamie Cooks Christmas.
