The crack of a good spring roll is one of the best sounds in the world. The crunchy golden pastry gives way to a tasty filling that varies depending on culture, time of day and general mood.

Of course, getting the right amount of filling to wrapper is a key part of creating the perfect springer. That and packing as much flavour as you can into the filling in the first place.
After that, a good spring roll demands nothing more than a decent dipping sauce and a little quiet so you can hear that mighty crunch as loudly as possible.

So, roll up, roll up and let's crack on with it.
